SAUTEED SHRIMP

 
PREP TIME: 10 MINS.            COOK TIME: 4 MINS.

  • 1 LB. Large Shrimp
  • 2 TBLS. extra-virgin olive oil
  • 1 TBLS. My Family's Salmon Seasoning
  • Juice and zest from 1 lemon
  • For SPICEY LOVERS ADD 1/4 tsp crushed red peppers

Directions:

  1. In a large bowl, combine shrimp, 1 tablespoon olive oil, 1 TBLS seasoning, half of the lemon zest. Toss to coat.
  2. Preheat grill pan over medium-high heat.
  3. Place shrimp on pan and cook, turning once, until cooked through, about 1 minute per side. Transfer shrimp to a serving platter and drizzle with remaining olive oil and lemon juice. Sprinkle with remaining 1/2 tsp seasoning (if desired) serve immediately.

Scallops:



  • 16 sea scallops, (about 1 1/2 pounds)
  • 1 1/2 - 2 TBLS My Family's Seasonings, Inc.
  • 1/4 Cup plus 2 tablespoons vegetable oil
  • 1/4 Cup drained capers, (about 2 ounces)
  • 1 lemon, cut into wedges

Directions

  1. Season scallops on each side with seasoning. In a large skillet, heat 1 tablespoon vegetable oil over medium heat until it just reaches the smoking point. Add 8 scallops to the pan, and sauté until golden brown, about 2 minutes per side. Remove from pan to a warm plate. Repeat with remaining scallops.
  2. In a second skillet, heat 1/4 cup vegetable oil over medium-high heat. Add capers, and cook until they open, about 1 minute. Remove with a slotted spoon to a plate lined with paper towels.
  3. Place 4 sea scallops on each of the four plates. Garnish each plate with 1 tablespoon fried capers, 1/4 tablespoon seasoning mix (if desired) and a wedge of lemon. Serve immediately.

 

SEASONED POTATO’S

Clean potato’s, pat dry

Slice and dice potato’s in small squares.

Place in large bag

Pour a little oil over potato’s in bag

Add 2 tsp of My Family’s Seasonings and shake bag

Pour seasoned potato’s on to a cookie sheet



Bake at 425 approx. 15 minutes or until crispy
