Tri-Tip Cooking Instructions
Ingredients:
1 Package My Family Seasoning 1 3-5 Pound Tri-Tip 1 Tablespoon Oil

Directions:

POUR seasoning in small bowl and stir well. Surround entire tri-tip with seasoning. If possible, marinate in refrigerator over night.

On a charcoal grill, wait until the coals are ash-covered and the heat medium. On a gas bar-b-que, bring to med. heat

Using tongs and a paper towel to wipe a thin sheen of oil on the grill grate. Place Tri- Tip on grill over direct heat. You should hear a slight sizzle, but the heat should not be too high. Grill uncovered, turning several times for 35 to 45 mins.
TEST FOR DONENESS:
The easiest way is by simply cutting off a small piece of the triangular ends. When the center is an opaque pink (medium rare) the rest of the tri-tip has about five minutes to cook. Eat this corner yourself; it's the cook's sample!
OR . . . check meat as it cooks with an instant read thermometer. For medium rare remove from grill when temperature reaches 140 degrees
Let meat rest for 10-15 minutes before slicing. This allows the juices to seep in and flavors to continue to blend. It also keeps the meat juicy!
Slice the meat with a sharp carving knife against the grain, in the thinnest cuts you can manage.
TIPS:
If while carving you discover that the inside of the tri-tip is raw or too rare for your taste, return it to the grill at low heat until it reaches desired doneness.
